ABOUT Baigan vadi RECIPE

Baigan vadi is a very traditional dish of Bihar. Easy and very simple recipe without onion and garlic. You can serve this with plain roti or paratha.

Ingredients Serving: 4

  1. 500 gms Baigan (brinjal)
  2. Urad vadi 100 gms
  3. Turmeric powder 1-2 tsp
  4. Salt to taste
  5. Panch foran (including sauf, mustard seeds, methi, jeera and ajwain)
  6. Oil 2 tbsp
  7. Green chillies

Instructions

  1. Cut the Baigan itno desired pieces.
  2. Heat the oil in pan and fry the urad vadi's and set aside.
  3. Heat a pressure cooker put some oil add Panch foran then add Baigan and fry till the raw smell goes out.
  4. Then add fried urad vadi, turmeric powder & salt in it.
  5. Sprinkle some water and take the 2 whistles.
  6. One in full flame and another is in low. Now switch off the flame.
  7. After open the lid mash them.
  8. Serve with roti's and paratha 's.
