ABOUT Aam tel/ flavoured raw mango oil/ raw mango pickle RECIPE

Aam tel is a Bengali flavoured oil pickle with raw mango. Very easy to make. It can be stored for many years. The tangy flavour of the mango and sharpness of the mustard oil makes it a unique pickle. Goes well with dal or puffed rice ( muri).

Ingredients Serving: 10

  1. Green mango (cut in big pieces)- 1 kg
  2. Cumin seed ( whole)- 25 gm
  3. Panch phoran- 25 gm
  4. Turmeric powder- 25 gm
  5. Red chilli powder- 25 gm
  6. Salt to taste
  7. 400 gm mustard oil

Instructions

  1. Heat the pan and roast cumin seed and panch phoran and ground it.
  2. Marinate the mango pieceswith turmeric powder and salt.
  3. Keep the marinated mango pieces under the sun for 2-3 days.
  4. After 2-3 days keep the sun dried mango pieces in a glass jar and pour cumin panch phoran roasted powdw, salt to taste and mustard oil.
  5. Close the jar properly and shake it well
  6. Keep it for 1 month and place it under the sun properly.
  7. After a month mustard oil will absorb all the aroma of raw mango. Enjoy the pickle with plain rice, dal or puffed rice (muri)
