ABOUT Appam/ lacy hoppers RECIPE

Appam is a traditional tasty breakfast of Kerala, the God's on country. Vegetable curry, vegetable stew, chicken curry, egg curry, green peas curry is all a great combination for appam or u can just add one egg in the middle of the batter, it is egg appam. It is also known as Hoppers. Hope u all like it.... :smile::yum:

Ingredients Serving: 7

  1. Raw rice 2 cups (soaked for 4 to 5 hrs)
  2. Coconut grated 3/4 cup
  3. Cooked rice :rice: (leftover rice) 1/4 cup or a handful of rice :raised_hand:
  4. Baking soda 1 pinch (optional)
  5. Yeast 1/2 tsp
  6. sugar
  7. Salt

Instructions

  1. First you should grind the soaked rice, coconut and boiled rice finely with water. It Should not be too watery, dosa batter type.
  2. Mix yeast, 1 tsp warm water (its good if coconut water available) and 1 pinch sugar. Wait for the yeast to be dissolve, takes 10 to 15 minutes .
  3. Add this water to the dough, mix well. After 6 hrs (if the dough is prepared in the night, we can use it in the morning) the dough should be fermented and doubled, take preferred quantity of dough (Balance batter kept in the fridge) and add salt, sugar, soda, wait for 5 minutes.
  4. We have this kadai called 'appa chatti' in Kerala, we used this to make appams. Don't be sad if the kadai is not there, u can make it in dosa or chappathi tawa, then the batter should not be runny.
  5. Heat the kadai, pour a ladle full of batter, take the kadai and swirl it that the batter should be round in shape. Cover it with a lid.
  6. After 5 to 6 seconds, open the lid, and u can see the centre portion would be puffed and make sure that the centre is cooked perfectly. Your soft lacy appam is ready.
