Ingredients Serving: 8

  1. Sago [tapioca pearls] - 1 bowl soaked overnight
  2. Sugar- 3/4bowl
  3. Saffron- 4-5 strings
  4. Yellow food colour-2-3 drops
  5. Cashew nuts -5-6
  6. Clarified butter-2-3tbsp

Instructions

  1. Strain the soaked sago in strainer
  2. Heat a nonstick pan, add 2 tbsp clarified butter
  3. Add cashew nuts, saute till they are light brown in color, keep them aside.
  4. Now add sago into the same pan and saute for 2-3 minutes
  5. Add sugar, a pinch of salt mix well and cook for 4-5 minutes, keep stirring .
  6. Now the sugar would start to melt and the sago will get sticky.
  7. Now add saffron and yellow food colour, mix well & cook for 2-3 minutes .
  8. Sago gets thick and starts leaving the sides of the oan, switch off the flame ,mix fried cashew nuts into it.
  9. Allow to cool...take small parts of mixture and make round balls
  10. Roll in to coconut powder garnish with cherry
  11. Keep aside or refrigerate to make it completely set and serve chilled.
