Ingredients Serving: 4

  1. Basmati rice- 2 cup
  2. Sliced onion-1 and 1/2 cup
  3. Salt to taste
  4. Whole black pepper- 6
  5. Whole black cardamom- 2
  6. Bay leaf- 1
  7. Cloves- 4
  8. Star anise- 1
  9. Green cardamom- 4
  10. 1 tbsp fennel
  11. 1 tbsp coriander seeds
  12. 1 tsp cumin
  13. Whole red chili- 4
  14. 2 tbsp butter
  15. Oil for frying
  16. Coriander leaves for garnishing


  1. Wash and soak the rice in enough water for 20 minutes.
  2. Add 4 cups of water, salt, and whole spices. Cover and boil for 15 minutes, then drain the water and remove the spices. Add the rice in the remaining water, cover and simmer until the rice is cooked. Turn off the stove.
  3. Heat the oil, fry the sliced onion until they turn golden and crisp.
  4. Heat the butter in a non- stick pan on medium flame, add the cooked rice and onion. Mix gently and stir for a couple of minutes, then turn off the flame.
  5. Garnish with coriander leaves and serve hot with curd.
