ABOUT Aam Ki Subzi RECIPE

Sweet and tangy aam ki subzi [mango curry], that can be served with some hot chapathis or some rice as well.

Ingredients Serving: 4

  1. 500 g mango pulp, fresh
  2. 2-3 tbsp Ghee
  3. 1 tsp onion seeds
  4. 1/2 tsp fenugreek seeds
  5. 1/2 fennel seeds
  6. 1 whole chili
  7. 1/2 tsp chili powder
  8. 10-20 g jaggery (according to taste)
  9. 1/4 tsp. black salt
  10. 1/2 tsp. salt (according to taste)

Instructions

  1. Melt the ghee in a pan and placed on medium heat.
  2. Once ghee is melted and hot, add in the whole chili.
  3. Cook it briefly for a minute or two.
  4. Add in the onion seeds, fenugreek seeds, chili flakes and fennel seeds. L
  5. Let them cook on medium heat for a minute.
  6. Be careful, not to burn the spices.
  7. Add in the mango pulp and mix it well.
  8. Mix in the salt, black salt and jaggery.
  9. Let it simmer on low-medium heat for 5-10 minutes.
  10. Add in some water if needed.
  11. Season with salt and sugar, according to taste
  12. Serve with hot paranthas.
