ABOUT Zafrani Amarkhand RECIPE

Ingredients Serving: 8

  1. 600g thick yoghurt (Greek)
  2. 400 g mango, pureed
  3. 50g sugar, according to taste
  4. ¼ tsp saffron, extra for garnish
  5. 1-2 tbsp. warm milk
  6. Handful almonds and pistachios

Instructions

  1. In a clean muslin cloth place all the yoghurt.
  2. Gather the edges of the muslin cloth and tie a knot.
  3. Hang it for 1-2 hours to strain out all the water.
  4. Soak the saffron in 1-2 tbsp of warm milk.
  5. In a bowl, mix together chakka, mango puree, sugar and saffron milk.
  6. Whisk to combine all the ingredients.
  7. Chill it for few hours.
  8. While serving, garnish the shrikhand with slivered almonds, pistachios and saffron.
  9. Serve chilled.
