You can have this recipe in breakfast and brunch both....very nutritious...good aroma of mint.....awesome taste

Ingredients Serving: 3

  1. Mint leaves - lots
  2. Cooked rice(60%) - 2 cups
  3. Salt as per your taste
  4. Green chilli as per your taste
  5. Coriander leaves half of mint leaves
  6. Garlic cloves - 12-15
  7. Curd - 1/2 cup
  8. Desiccated Coconut - 1 tbs
  9. Chopped onion - 1/4 cup
  10. Chopped capsicum- 1 cup
  11. Chopped French bean -1 cup
  12. Chopped capsicum -1 cup
  13. Green peas - 1/2 cup
  14. Chopped tomatoes - 1/2 cup
  15. Whole spices ( black Cardamom, green Cardamom, Cumin seeds,black pepper, Cloves,bay leaf)
  16. Paneer cubes (Optional) -1 cup
  17. Cashew nuts -1/2 cup
  18. Chaat masala as per your taste
  19. Oil - 1/8 cup

Instructions

  1. First of all take a grinder and add Coriander leaves, Desiccated Coconut, Mint leaves, green chillies and make a smooth paste with the help of few water
  2. Now take a kadhai and add Garlic and saute till brown colour and then add whole spices
  3. Now deep fry Paneer and cashew in this oil or another pan and take out and keep aside
  4. Now add Veggies and add salt , chaat masala and mix well for 4-5 minutes..
  5. Now add Mint coriander paste and curd and mix properly
  6. Now place the rice and then Paneer, cashew nuts and some chopped coriander leaves and Mint leaves and sprinkle some chaat masala and Salt
  7. Cover it with a foil and then lid on the foil and cook for 7-8 minutes on low flame......
