ABOUT Chicken Dum Biryani RECIPE

A delicious and yummy chicken biryani, which is spicy and finger licking good.

Ingredients Serving: 4

  1. Chicken - 500 grams
  2. Ginger paste - I tsp
  3. Garlic crushed -1 tsp
  4. Sliced onion -5-6
  5. Yoghurt-100 ml
  6. Tomato -3( paste)
  7. 1/2 tsp Jeera,
  8. 1/2 tsp coriander seeds
  9. ,2 badi elechi [black cardamom]
  10. 3-4cloves,
  11. 1 bay leaf [ground into a powder]
  12. one tbs Lemon juice -2 lemon
  13. Turmeric powder -1 tsp
  14. Mustard oil -100 ml
  15. Ghee -2 tbs
  16. Red chili powder - 1/2 tsp
  17. Salt
  18. Kismis [raisins] -25 grams
  19. Cashew nuts -25 grams( paste)
  20. Black pepper powder -1/2 tsp
  21. cumin seeds - 1 tsp
  22. cinnamon 1 inch
  23. Coriander and mint leaves
  24. Saffron in milk - 2 tbsp
  25. Basmati rice -2 cup
  26. Fried onion -2-3 slices

Instructions

  1. First wash chicken very well. Marinate it now.
  2. Add mustard oil.Add turmeric powder, red chili powder, lemon juice salt, mixed powder. Mixed it very well. Keep aside . After one hour it is ready to cook. Now heat a cooker. Add oil Add jeera bay leaves cinnamon. Add onion. Fry it
  3. Now add ginger paste and crushed garlic. Fry it two minutes. Now add marinated chicken With masala.Tomato paste.and Yougart . Add one glass water. Cook it until It leave oil now add cashew paste. kismis and Black pepper powder .
  4. Add chopped coriander and mint leaves . cover lid. Cook it for 15 minutes in low flame. Meanwhile boil water ,add salt and ghee and khade garam masala ,When it boils add the washed and soaked basmati rice, Cook till half done and then strain it.
  5. Take handi .First Grease it with ghee. Fill one layer of half cook rice and now spread chicken with masala. Again a layer of rich. and then arrange chicken with masala. Last layer of rice. Now spread fired onion slices. Spread ghee.
  6. And soak kesar. Now for dam take aata dough.Put a layer of aata sides of handi put lid on it. Press it tightly. Now put burned charcoal on lid. Gas on low. Cook it 10 -15 minutes. Now open lid put a roti in hand. Put a burning charcoal .
  7. put cloves 2-3 add one tsp ghee. Put lid on handi. After 5 minutes. It's ready
