ABOUT VEG PATIALA RECIPE

Veg Patiala, a creamy gravy with mixed veggies layered with fried papad, a unique taste and a delicious accompaniment with your parathas and rotis!

Ingredients Serving: 4

  1. For Papad Rolls-
  2. 50 grams Grated Paneer
  3. 1 tbsp oil
  4. 1 cup Grated Vegetables ( Cauliflower, Carrot, Cabbage)
  5. 1/3 cup Chopped French Beans
  6. 2 tbsp chopped coriander leaves
  7. 1 tsp cumin seeds
  8. 1 tsp Fennel seeds
  9. 1 tbsp ginger-garlic paste
  10. 1/2 CUP ONION PASTE
  11. 1 tsp garam masala
  12. 1/2 tsp Turmeric
  13. 1 tsp red chilly powder
  14. 1 cup Fresh Tomatoes Puree
  15. Salt to taste
  16. 2 tbsp Fresh Cream
  17. 1 tbsp Butter
  18. For garnish-
  19. Grated paneer

Instructions

  1. Veg Papad Rolls - Heat oil in a pan, add cumin seeds, raisins, and dry fruits. Also add the grated vegetables and cottage cheese,. Give it a toss. Add french beans to the mixture and mix them well.
  2. Add red chilli powder, turmeric powder, garam masala powder and salt. Mix it well.
  3. On a low flame, cover the lid and cook it for 3 to 4 minutes. Add coriander leaves and give it a mix.
  4. Cut papad in to half and apply water to make it moist. - Place the stuffing in the center and seal the papad with the help of water.
  5. . - You can also make the traditional cylinder style of papad rolls.
  6. Heat oil in a pan on moderate flame and place the papad rolls. - Fry papad on all sides. - Stuffed papad rolls are ready
  7. FOR THE GRAVY- - Heat ghee in a pan. Add cumin seeds and fennel seeds.
  8. Add ginger garlic paste, onion paste and cook well.
  9. Once cooked, add red chilli powder, turmeric powder, garam masala powder and mix well.
  10. Add tomato puree and mix evenly. Allow them to cook. - Cover it and cook it for 10 to 15 minutes.
  11. Once cooked, add water along with salt and allow it to cook for 4 to 5 minutes.
  12. Place the papad rolls in the gravy and coat them well. - Add butter and cream to the gravy and mix properly.
  13. Garnish it with coriander leaves and panner and serve hot!
