ABOUT Devilled eggs or dimer chop RECIPE

Kolkata style dimer chop are hard boiled eggs covered with a spicy potato or ground meat mixture egg washed or dipped in flour batter, coated with breadcrumbs and deep fried. A very delicious and filling snack and a famous street food of Kolkata.

Ingredients Serving: 4

  1. Hard boiled eggs 4
  2. Boiled potatoes 4 large
  3. onion 2 large finely chopped
  4. Grated ginger 1 teaspoon
  5. Garlic paste 1 teaspoon
  6. Cumin powder 1 teaspoon
  7. chaat masala 1 teaspoon
  8. Garam Masala Powder 1/2 teaspoon
  9. Roasted spices powder 1 teaspoon, optional
  10. Salt to taste
  11. Oil 3 tablespoon
  12. Beaten egg 1
  13. Refined flour or maida 1/2 cup or as require
  14. oil for deep fry
  15. Breadcrumbs 1 cup or as require
  16. Chopped Coriander leaves 2 tablespoon
  17. Black salt to sprinkle

Instructions

  1. Peel the hard boiled eggs, cut them lengthwise, sprinkle little salt and pepper and keep aside m
  2. Peel and mash the potatoes.
  3. Heat oil in a pan. Add chopped onion and green chilli. Fry till onion becomes translucent.
  4. Add garlic paste and grated ginger. Saute till the raw smell goes away.
  5. Add mashed potatoes, salt and all the spices.
  6. Mix well. Saute for few minutes. Add chopped coriander leaves, mix and switch off the flame.
  7. For roasted spices powder dry roast 2 tablespoon each cumin and coriander seeds, 4-5 green cardamom, 4 cloves and 1-2 dry red chilli. Let it cool down. Store in airtight container for later use.
  8. Let the potato mixture cool down.
  9. Take 2 plates. Spread refined flour or maida in one plate. And spread the breadcrumbs in another.
  10. Mix little salt and pepper in the beaten egg.
  11. Take a piece of egg. Cover it with potato mixture. Half egg should be covered from all sides.
  12. Shape it as a full egg with your palm.
  13. Roll in maida and then dip in beaten egg.
  14. Now roll it on breadcrumbs. Place it on a plate, make all the egg devil or dimer chop like this.
  15. Keep in refrigerator for an hour.
  16. Heat sufficient oil in a pan. Slide the egg devils gently into the hot oil.
  17. Fry from all the sides. When it turns into golden brown remove from the oil.
  18. Sprinkle little black or pink salt over these.
