Ingredients to make Caramel Banana Muffins

  • 2c all purpose flour
  • 1 1/2tsp Baking powder
  • 1 1/4c Powdered sugar
  • 1c butter room temp
  • 3 Large eggs room temp
  • 3/4c Caramel syrup
  • 2 Large bananas
  • 1/2tsp Vanilla essence

How to make Caramel Banana Muffins

  1. Sieve the dry ingredients flour and baking powder. Make the caramel syrup by caramelizing 3/4c sugar and add 1/2c hot water to this. Be very careful while doing this.Keep this syrup aside for cooling.
  2. Now beat butter and powdered sugar in a bowl. Add eggs one at a time and beat well after each addition. Add vanilla essence.
  3. Now put the flour mixture and caramel syrup little by little and fold in well. Now mash the bananas well and mix into the flour mixture and mix well. Line the cup cake moulds with cupcake liners.
  4. Preheat the oven at 200 degree C for 10 mins. Pour the batter to the prepared moulds. Don't fill the liners fully.
  5. Now keep this for baking. Bake at 180 degree C for 15 to 20 mins or till the tester comes out clean.
  6. Take out from the oven and allow the muffins to cool. Enjoy these little treats with tea or coffee!!
