ABOUT RUM CHOCOLATE CAKE RECIPE

Adding rum gives amazing softness to cake and the cake tastes yummy too

Ingredients Serving: 10

  1. All purpose flour / Maida – 2 cup / 265 gms.
  2. Sugar – 1 3/4 cup / 380 gms.
  3. Oil – 3/4 cup.
  4. Egg – 4 nos.
  5. Cocoa powder – 1 cup.
  6. Rum – 1/2 cup.
  7. Baking powder – 1 tsp.
  8. Baking soda – 1 tsp.
  9. Salt – 1/4 tsp.
  10. Nutmeg powder– 1/8 tsp.
  11. Hot water – 1 cup.
  12. Vanilla essence – 1 tsp.

Instructions

  1. Pre-heat oven to 170” C – 30 mins.
  2. Grease your baking pan with butter or oil and dust with flour.
  3. Sift dry ingredients together -Maida , cocoa powder , baking powder , baking soda , nutmeg powder,salt for even mixing.
  4. Either using electric beater or food processor beat oil and sugar together till sugar dissolves with oil.
  5. Then crack open each egg to oil mixture and beat till foamy , likewise add each egg and beat till mixed.
  6. Empty the egg mixture to a wide bowl , add dry ingredients , hot water little by little to egg mixture and keep mixing ( I divided them as four batches and added).
  7. Finally add rum and mix till mixed.
  8. The mixture must be in ribbon consistency ( as in picture) , if mixture is thick add little more hot water.
  9. Pour the cake batter to dusted pan and bake for 30 mins or till the tooth pick comes out clean.
  10. When done remove from oven and let it cool down to room temperature , then invert the cake to wire rack and leave for 1 hour to cool completely.
  11. That's all ,refrigerate the cake for 1 hour then cut the cake into two halves ,sprinkle sugar water and frost the cake as you wish.

The cake retained the flavour of rum n was tastier next day. However the top cracked n the texture was too dense. In guessing due to gluten formation though I followed all steps n correct ingredient ratio.
