ABOUT Suran masala.. RECIPE

A nice way of making suran or elephant foot yam, that can be served with some dal and rice.

Ingredients Serving: 4

  1. Suran - 250 gms, peeled and cubed
  2. Mustard seeds - 1/2 tsp
  3. Hing - 1/4 tsp
  4. Curry leaves - 7-8
  5. Oil - 1 tbsp
  6. For Masala:
  7. Coconut - 1 cup
  8. Dry red chillies - 8
  9. Coriander seeds - 1 tsp
  10. Cumin - 1 tsp
  11. Tamarind pulp - 1 tsp

Instructions

  1. Boil yam till tender. This will take about 7-8 minutes. Drain and keep aside.
  2. In the meanwhile, grind masala ingredients coarsely without water. Do not make it very fine.
  3. Heat oil in a kadai and add mustard seeds and hing. Add curry leaves and put in the boiled yam.
  4. Fry for 4-5 minutes and add the ground masala. Mix and leave for about 10 minutes on low flame or till u feel the masala has cooked.
  5. Serve as a side dish with rice.
