ABOUT CASHEW LEMON BARS RECIPE

These vegan cashew lemon bars are perfect for tea or breakfast!

Ingredients Serving: 3

  1. Almonds one cup (for crust)
  2. Dates 15 (Pitted for crust)
  3. Lemon rind 1 teaspoon(for crust)
  4. Water for binding less than 1/4th cup (for crust)
  5. Cashews 1 cup (Soaked overnight)
  6. Lemon juice from 2 medium sized lemons
  7. Pitted dates 15
  8. Lemon rind 1 teaspoon
  9. Agar agar 1 inch (soaked in hot water)

Instructions

  1. Soak cashews for couple of hours or overnight. This is needed. Make crust with ingredients mentioned in food processor or grinder jar.
  2. In a steel dish, pat the crust at the bottom. Combine and blend cashews, dates, agar-agar, lemon juice, lemon rind altogether. Pour this over crust and leave to set in freezer for a couple of minutes.
  3. Serve by cutting into squares.
