Ragda Pattice

Ingredients to make Ragda Pattice

  • For Ragda
  • 1 cup white peas or chickpeas
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 inch piece of ginger grated
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1 green chilli chopped
  • A pinch of asafoetida/hing
  • salt to taste
  • For pattice
  • 4 large potatoes boiled
  • 1/2 cup bread crumbs
  • 2 chopped green chilli
  • 1 tsp dry mango powder
  • 1 tsp coriander powder
  • 1 tsp carom seeds
  • 1 tsp dry pomegranate seeds
  • 1/2 tsp black pepper powder
  • salt to taste
  • For serving/garnishing:-
  • green chutney
  • Red chutney/tamarind chutney
  • Beaten curd
  • Zero no. Sev

How to make Ragda Pattice

  1. Ragda Boil soaked matar [green peas], in pressure cooker for 2-3 whistles..
  2. Heat oil in wok... Splutter cumin seeds...
  3. Add ginger and all other masalas listed in ingredients for ragda
  4. Finally add boiled matar...keep on sim for 4-5 minutes
  5. Switch off the flame and keep aside
  6. For patties :
  7. cool and mash boiled potatoes...
  8. Add bread crumbs...
  9. Add salt, green chillies, and all other masalas listed in ingredients for pattice...
  10. Make a dough of potatoes...take a small portion of dough in your hands
  11. Give shape of tikki/round shape....and deep fry in oil
  12. Make all patties in same way
  13. Now to serve...take a serving dish
  14. Spread a layer of matar...place patty on it...
  15. Add both chutneys and beaten curd
  16. Finally serve with sev...it's really very sumptuous
