Ingredients Serving: 6

  1. Ingredients for Kulcha : 150 g - Refined flour ,
  2. 1/3 tsp - baking powder
  3. 1.5 tbsp - Ghee
  4. 1/2 tsp - salt
  5. 1/4 tsp - Sugar
  6. 1tbsp - oil
  7. 2 tbsp - fresh coriander
  8. For the filling : 50 g - boiled Potato
  9. 50 g - paneer
  10. 1/4 tsp - chilli flakes
  11. 1\2 tsp - dried Pomegranate seeds
  12. 1/2 tsp - dried Fenugreek leaves (kasoori methi)
  13. 2 - chopped Green chillies
  14. 1/2 tsp\ as per taste - salt
  15. Ingredients for chole : 1+1\2 cup dried chole,
  16. 2 boiled meshed potato ,
  17. 1 GREEN CHILLI,
  18. 1 tsp dhania powder,
  19. 1\2 tsp lal mirch powder
  20. 1\2 tsp amchur powder,
  21. 1\4tsp haldi,
  22. 1\2 tsp garam masala powder,
  23. 1\2tsp chole masala,
  24. 1\2 tsp awla powder,
  25. a pinch of hing,
  26. 1/2 tsp black salt
  27. Salt as required
  28. whole garam masala- (1 tsp cumin seeds,1 large tej patta,2 inch dal chini,2-3 laung,2 doda 2-3 kali mirch )
  29. 2 medium size tomatoes chopped ,
  30. 1\2 inch adrak, chopped .
  31. 3 tbsp oil

Instructions

  1. To make dough, sift the refined flour with the baking powder and salt.
  2. Add the sugar and ghee and a little water knead well to make a medium soft dough.
  3. Add a little oil and knead again. Cover with a damp cloth and rest the dough for one hour.
  4. Knead the dough once again and divide it into eight equal portions.
  5. Cover with a damp cloth and rest it for ten minutes.
  6. For the stuffing , mix together the potatoes, paneer ,salt, green chillies, chilli powder, dried pomegranate seeds and the fresh coriander.
  7. Divide the potato mixture into eight equal portions.
  8. Flatten a portion of the dough, place a portion of the potato mixture in the center , and fold the dough and roll into a ball.
  9. Place on a lightly floured surface and roll gently into a circle.
  10. Roll with rolling pin and sprinkle coriender.
  11. Now heat tandoor on high flame and pat it with little water and place it on tandoor's cover and cook in medium flame .
  12. Take out kulcha when it is light golden .
  13. Spread butter and serve with chole and carrot and radish salad .
  14. To make chola's ,first soak the chole in enough water overnight or for 7-8 hours.
  15. Drain the water and cook the chole with water,salt and haldi in a pressure cooker
  16. Strain the chole and keep aside.save drained water.
  17. Heat oil in a kadai. fry the whole garam masala till the oil become fragrant . don't burn them.
  18. Add tomatoes and adrak and saute till the oil starts to leaves the sides of the paste.
  19. Add all the dry spice powders . stir and saute for a minute.
  20. Add the cooked chole and mashed potato , stir and pour drained water.
  21. Add salt and simmer on a low or medium flame for 12-15 minutes till the curry thickens. don't cover the pan .
  22. Stir occasionally and simmer for a minute or two. garnish chole with coriander leaves.
