ABOUT Litti Chokha RECIPE

Litti Chokha is an extremely popular street food of Bihar. The litti is a whole wheat flour ball stuffed with spiced up sattu or roasted gram flour. This is accompanied by Chokha which is basically a mash of roasted eggplant, roasted tomatoes and some spices.

Ingredients Serving: 2

  1. For the litti dough:
  2. Whole Wheat Flour or Atta, 2 cups
  3. Ghee, 2 tbsp.
  4. salt as per taste
  5. Water to knead the dough
  6. For the Litti Filling:
  7. Roasted Gram Flour or Sattu, 1 cup
  8. Onion, 1 medium sized, finely chopped
  9. Green Chillies, 2 , finely chopped
  10. Pickle Masala ( Mango or Chilli Pickle ), 2 tbsp.
  11. Ginger- Garlic, 1 tbsp, grated
  12. Carom Seeds ( Ajwain ), 1 tsp.
  13. Coriander leaves, chopped
  14. Mustard Oil, 2 tbsp.
  15. salt as per taste
  16. For the Chokha:
  17. Eggplant, 1 medium sized
  18. Tomatoes, 2 large sized
  19. Onion, 1 large sized
  20. Green Chillies, 2 nos., finely chopped
  21. Ginger, 1 tsp., grated
  22. Garlic Cloves, 6-8 nos.
  23. Mustard Oil, 1 tbsp.
  24. Coriander leaves
  25. salt as per taste

Instructions

  1. To make the Littiis: Mix atta, salt and ghee in a bowl. Add water gradually while kneading a smooth and soft dough. Take all the ingredients for filling in a bowl. Mix well so that you get a a damp consistency.
  2. Divide the dough into 10 equal portions. Roll out each ball and place a tablespoon of the filling in the center.
  3. Nicely seal the edges and roll it between you palms to make a smooth ball. Repeat the same process with the remaining portions.
  4. Place the littis on a greased baking tray and brush with a little ghee.
  5. Preheat oven at 205°C and bake for 20 - 25 minutes.
  6. To make the Chokha: Roast eggplant, tomatoes and garlic cloves on direct fire till charred. Let them cool.
  7. Peel the skin of the eggplant and tomatoes and mash them together.
  8. Chop the garlic cloves. Add to the mashed eggplant and tomatoes.
  9. Add the remaining ingredients - chopped onion and green chillies, grated ginger, mustard oil and salt. Garnish with coriander leaves.
  10. To serve Litti Chokha: To eat littis, break them and drizzle a generous amount of hot ghee so that the filling is nicely soaked. Enjoy with chokha.
