ABOUT Yemenite Honeycomb Bread (Khaliat Al Nahl).. RECIPE

A popular Arabic bread from Yemen that is usually filled with cheese and topped with sugar syrup. Gorgeous and a super stunner in looks, it just melts in the mouth and can also be filled with your choice of savouries if desired. It looks so nice after it is baked and makes for an excellent breakfast or brunch idea that will be loved by all.

Ingredients Serving: 6

  1. All purpose flour 3 1/2 cups
  2. Warm Milk 1 cup
  3. Yeast 2 tbsp
  4. Sugar 1 tsp
  5. Egg beaten 1
  6. Melted butter 3 tbsp
  7. Warm water if required some
  8. FOR THE FILLING....
  9. Cheese cubes 24 , one each cut into 2
  10. FOR THE TOPPING ;
  11. sugar 1 cup
  12. Water 1 cup
  13. Rose water 1 tsp
  14. Black seeds or sesame seeds 2 tbsp
  15. Milk 1/4 th cup additional for milk wash

Instructions

  1. First of all add yeast and sugar to a cup of warm milk.
  2. Stir lightly and allow it to prove.
  3. Combine the rest of the ingredients in a large mixing bowl and add the yeast mix into it.
  4. Make a smooth dough out of it.
  5. Knead it well for 5 minutes and cover.
  6. Allow it to rise by keeping it in a warm place for atleast 2 hours.
  7. After 2 hours, punch down the dough once and divide it into four portions.
  8. Divide further into 12 balls each
  9. In this way we will have 48 balls out of the 4 portions.
  10. Add cheese in each and shape them back into a ball securing each nicely. See to it that the ball is smooth and round.
  11. Arrange them all closely just as to resemble a honeycomb.
  12. Give milk wash and sprinkle blackseeds or sesame seeds on top.
  13. Keep aside for a second proofing for a further 30 minutes.
  14. Bake in a preheated oven on 180° for 20 to 25 minutes.
  15. Make sugar syrup of one string consistency with all the ingredients listed under it.
  16. While it's still hot and just out of the oven, pour this sugar syrup on top so as to drench it completely.
  17. Tadaa!!!!!! It's all ready to be devoured.
