ABOUT Herbed Mushroom & Spinach Crostini RECIPE

Mushroom and spinach crostini make excellent appetizer or snack for any party. It is a healthy breakfast too. Goodness of milk in whitesauce with spinach and mushrooms makes it a nutritious affair. You can keep it ready ahead of time and just reheat before your party also.

Ingredients Serving: 2

  1. Long bread loaf. I have used Masala loaf. Garlic or plain can also be used.
  2. Butter/ ghee for roasting
  3. Button mushrooms 8-10
  4. Oil 1 tablespoon
  5. Cumin seeds 1 teaspoon
  6. Garlic crushed 1 teaspoon
  7. Onion 1 small
  8. Spinach leaves 6-7
  9. Coriander leaves 1/2 cup
  10. Greeen chilly 1
  11. Cheese slice 2/ cubes 1
  12. Mixed herb/ Pizza seasoning 1 teaspoon
  13. Slat to taste
  14. Milk 1 cup
  15. Wheat flour 1 tablespoon

Instructions

  1. Cut mushrooms in small pieces
  2. Cut onion in fine pieces
  3. In a saucepan heat oil. Add cumin seeds
  4. Add garlic and onion and saute till soft
  5. Add chopped mushrooms and cook till mushrooms are soft
  6. Mushrooms will ooze out water on cooking. Let it dry or take out excess water to use as stalk for soup. Add salt sufficient for mushrooms and mix well.
  7. Now, add wheat flour in mushroom mixture and roast for a while
  8. When the flour gets roasted with mushrooms, add milk.
  9. Mix well to combine everything and let the sauce cook
  10. In a bowl mix chopped spinach, coriander leaves, finely cut greenchiliies and mixed herbs
  11. Add cheese slices to spinach mixture
  12. Mix spinach mixture to mushrooms
  13. Mox well. Add only little salt here if required. Remember, we have added salt for mushrooms already and cheese and herbs will have salt.
  14. Sauce is ready now. Which can be kept to cool a bit.
  15. Meanwhile, take masala/ garlic loaf
  16. Cut it into long crostini
  17. Heat tawa and roast these crostini with ghee from both sides
  18. Take out roasted crostini in plate
  19. Apply spinach mushroom sauce on one side
  20. Garnish and serve. I have used pomegranate seeds. You can use tomato or anything you like.
