ABOUT Mexican Lime Chicken RECIPE

Mexican Lime Chicken is marinated Chicken breasts in lime juice, lime zest, coriander, paprika and grilled either in oven or stove stop grill pan. Mexican Lime Chicken can be served as a starter or a side dish to lovely weekend meal and also a great option to serve in your brunch parties. Lime juice and zest when teemed up with coriander and paprika gives an amazing aroma and flavor to the chicken keeping it juicy and soft.

Ingredients Serving: 4

4 piece chicken breast
5 tbsp olive oil
4 tbsp lime juice
1 tsp lime zest
1 tbsp crushed coriander seeds
1 tsp salt
1 tsp paprika
1 tbsp chopped cilantro

Instructions

Clean, wash the chicken breasts, make 1 inch slits and keep aside.
Collect all the other ingredients and in a large mixing bowl, add olive oil with the rest of the ingredients and mix well.
Add chicken breasts and marinate for minimum 1 hour in refrigerator.
Heat grill pan on the stove top and spray/brush some oil.
Place the marinated chicken on it and grill from both sides till the chicken is cooked soft and juicy.
Transfer the grilled/roasted chicken on a serving platter and serve with a dash of lime juice all over.
Serve Mexican Lime Chicken with salad and creamy dips.
