ABOUT Stuffed onion potato RECIPE

This is a speciality dish of the interior region of Gujarat, Kathiyavad. It consists of a finger licking stuffing and aromatic vegetables which is so easy to prepare.

Ingredients Serving: 5

  1. 15-17 pieces Baby Potatoes
  2. 6-8 pieces Onions Medium Size
  3. 6-7 tbsp Oil
  4. 3-4 tsp Chopped Green Coriander
  5. 1 cup Besan
  6. 2/3 tsp Garam Masala
  7. 1/2 tsp Turmeric Powder
  8. 1 tbsp Red Chilli Powder
  9. 2 tbsp Coriander-Cumin Powder
  10. 2 tsp Oil (To add in the stuffing )
  11. Salt to taste

Instructions

  1. Roast the besan on a slow flame till it gives a nice aroma and has a golden brown colour. Then turn it off. Mix all the other spices and let it cool. Add oil into this stuffing and mix it well. Keep it aside.
  2. Wash and peel the potatoes and onions. Make a plus cut sign on them in such a way that the base will be connected. Fill a spoonful masala inside it. Take a non-stick pan, put in oil, once it heats up add hing and potatoes.
  3. Sprinkle about 1-2 tsp of water and cover the pan. (Note that the flame should be kept slow to medium.) Keep stirring occasionally in between. Once the potatoes get soft add the onions and sprinkle some water, mix it well.
  4. Now cover the pan and allow it to cook for 5-6 minutes on a slow flame.
  5. Garnish with coriander and serve with bajri roti for best taste.

I see how the besan and masalas give this simple dish a texture and some flavour! I will prepare this at home soon
