ABOUT Chhuna with paneer pulao RECIPE

Chhunna is marwari dish in which wheat is cooked in milk only and it is served with ghee and sugar. Paneer pulao is here for complementing chhuna.

Ingredients Serving: 4

  1. 2 cup wheat
  2. 2 liter milk
  3. 4 tsp Cardamon powder
  4. 10 saffron strings
  5. For Serving--
  6. ghee
  7. sugar to taste
  8. For pulao---
  9. 1 cup rice
  10. 1 /2 cup paneer
  11. 1/2 cup chop onion
  12. 7-8 cloves garlic
  13. 2 green chilli
  14. Chop ginger
  15. 2 tbsp oil
  16. 1 tsp jeera
  17. 1 tsp Rai
  18. 1 tsp coriander powder
  19. 1 tsp red chiil powder
  20. 1 tsp fennel powder
  21. 1/2 tsp pepper powder
  22. 1/2 tsp garam masala
  23. salt to taste
  24. lemon juice 1 tsp
  25. coriander leaves for garnish

Instructions

  1. Sprinkle some water on wheat and give a quick but short grind to them 2-3times
  2. Spread them on paper or plastic to dry
  3. When they dry we can remove their covering
  4. Now we boil them in cooker
  5. It is very slow cooking dish required lot of patience and attention
  6. Now take milk and add wheat in it and cook on low flame
  7. Stir in regular gap
  8. Cook till thick
  9. Add cardmon powder
  10. Serve with ghee and sugar
  11. For pulao--
  12. Soak rice
  13. Take cooker and heat oil
  14. Add jeera, rai
  15. Add onion, ginger, chilli and saute till translucent.
  16. In a bowl add garlic,and spices and add little water mix all of them
  17. Add this mix in onion and roast
  18. Then add rice and roast
  19. Add 2 cup water and paneer
  20. Add salt and haldi
  21. Mix all of them and cook in cooker for 1 whistle
  22. Let it cool and add lemon juice and coriander leaves
