Besan Pancakes stuffed with Cottage Cheese

These are a perfect option for the start of your day. super healthy and delicious. they are very quick to make and I must say that it's shape steals the show :) just love them.

Ingredients Serving: 2

  1. Besan 1/2 cup less 2 tbsp
  2. water 1/2 cup lukewarm
  3. Red chilli powder 1/4 tsp
  4. salt as per taste
  5. For the stuffing
  6. Cottage Cheese: 70 gms (crumbled)
  7. Parsley: 1 tbsp. (finely chopped)
  8. Basil: 1 tbsp. (finely chopped)
  9. Black pepper powder: ½ tsp
  10. salt as per taste

Instructions

  1. In a small bowl whisk together besan and water. Add salt and red chili powder and mix well. A thin batter will be made. Keep aside for half an hour.
  2. Prepare the stuffing meanwhile. Mix together paneer, parsley, basil, black pepper powder, and salt. Keep aside.
  3. Heat a tawa (girdle). Pour a ladleful (depends upon the size you want for the pancakes) of the mixture on the pan. Keep the heat to medium low. Drizzle few drops of ghee on the sides of the pancake.
  4. Let the pancake cook for 1-2 minutes.
  5. Then carefully flip it and cook for one more minute.
  6. Keep the pancake on a cloth. Put a tbsp. of filling on it and fold as shown. You need to be quick here. Also, please don’t get your fingers burned while pinching the pancakes.
  7. Similarly, do for the remaining batter.
  8. serve hot
