ABOUT Spice crusted / papad crusted paneer tikka in green chutney RECIPE

Cubed paneers are first marinated in green chutney , crusted with roasted spice mix or roasted crushed papad / poppadum and then roasted in oven for 10 minutes.

Ingredients Serving: 7

  1. Paneer ( Indian cottage cheese) : 15 cubes
  2. Green chutney / cilantro - mint chutney : 4-5 tbsp
  3. Spice mix roasted and crushed coarsely : ½ cup (option 1)
  4. Spice mix : Coriander seeds : 1 tbsp Cumin seeds : 1 tbsp Fennel seeds : 1 tbsp White Sesame seeds : 1 tbsp Nigella (kalonji) seeds : 1 tbsp
  5. Roasted papad : 3-4 crushed (option 2)

Instructions

  1. Marinate the cubed paneer in green chutney (cilantro-mint chutney) for at least half an hour. Coat each side of the paneer well with the chutney.
  2. You can make this recipe two ways. Option 1 is by coating the paneer with roasted spices. Option 2 is coating the paneer by roasted crushed papad.
  3. Option 1 - Roast the spices in a pan and then crushed them coarsely in a mixer, a pulse or two is just fine to get a coarse mixture.
  4. option 2 - if you are not comfortable with spices, you can roast 3-4 regular or masala papad and crushed them coarsely.
  5. Insert a toothpick in the marinated cubed paneer and dip them in the roasted spice mixture or in roasted crushed papad.
  6. Coat them well with the spice mixture/ crushed papad and arrange them on a baking tray lined with foil.
  7. Roast them in a preheated oven at 375 F for 10 minutes.
  8. Serve immediately with green chutney or sauce.
