In this dish whole / musallam cauliflower is cooked with palatable spicy tomato and onion gravy and then served quite exotic way .

Ingredients Serving: 8

  1. 2 whole cauliflowers
  2. 1 tejpatta
  3. 1 doda (badi elaichi )
  4. 2 loung
  5. 1/4 tsp jeera
  6. 3 onion grated
  7. 2 tbsp ginger-garlic paste
  8. 2 tomato chopped
  9. 3 tbsp Curd
  10. 2 tsp chilli powder
  11. 1/4 tsp turmeric powder (haldi)
  12. 2 tsp dhaniya powder
  13. 1/4 tsp garam masala powder
  14. 1/4 t sp aamchoor
  15. Salt to taste
  16. 2 potato wedges (fried )
  17. 3 tb sp oil for cooking
  18. coriander (dhaniya) leaves and green chilli for garnishing

Instructions

  1. Take cauliflowers and cut off the hard central stem . Take hot water in a pan and add salt, turmeric and head of cauliflower.
  2. Blanch till the cauliflowers are softened a little.Transfer the cauliflowers to a large colander and let cool.
  3. Take the oil in a kadahi heat and add tejpatta ,doda, loung and jeera.
  4. Add onions and fry till transparent. Add Ginger garlic paste and fry for 2 minutes in medium flame.
  5. Add the chopped tomatoes, salt and fry till it becomes soft and mushy.
  6. Add all the masala powders and fry in medium flame for 2 minutes .
  7. Add curd saute till oil separates. Add a little water .Simmer for a minutes .
  8. The consistency should be thick.
  9. Stuff a little of this gravy in between the cauliflower florets and stems. Keep aside .
  10. Add potato wedges and some water to the remaining gravy to get a desired consistency
  11. Now Place the stuffed cauliflower in a baking dish.
  12. Slowly drop the gravy on top to cover the entire head of the cauliflower.
  13. Some gravy will fall on the side and heat through in a microwave for 3 minutes.
  14. garnish with coriander leaves and green chilli .
