ABOUT Stovetop Mac N Cheese... RECIPE

A silky , glossy cheese sauce with my tender , never mushy macaroni . It's a perfect classic- and it just happens to be in one pot . It would be easy to assume that I make this in one pot for convenience . But I swear that's really not the reason why . The reason I make this in one pot is because the starch released from the pasta mixes in with the sauce and emulsifies it , creating a cheese sauce that is silkier and clings better to the pasta than making it the traditional way ( i.e. pasta and sauce differently )

Ingredients Serving: 6

  1. 3 1/2 tbsp (50 gms) butter
  2. 3 tbsp flour
  3. 2 cups Milk
  4. 2 1/2 cups water
  5. 2 1/2 cups elbow macaroni (250 gms)
  6. 3 1/4th cup mozzarella cheese ; shredded
  7. 1 1/2 cups mozzarella
  8. salt to taste
  9. pepper
  10. 1 tsp garlic powder
  11. 1/2 tsp onion powder
  12. 1/2 tsp mustard powder


  1. Melt butter in a large or medium pot over medium heat .
  2. Add flour and cook for one minute .
  3. Add about 3/4th cup of milk and mix into butter mixture - it will become a slurry pretty quickly .
  4. Add remaining milk and mix so the slurry mixes in .
  5. Then add water and seasonings (garlic powder , onion powder and mustard powder)
  6. Add macaroni and mix . Stir occasionally as it comes to heat . When you see wisps of steam as you stir , lower the heat down to medium low .
  7. Stir regularly as it cooks for 9-10 mins . It also bubbles gently , or until the sauce thickens and the macaroni is just cooked - tender but still firm .
  8. It should be saucy at this stage and thinner as well .
  9. Take it off the stove and stir in the cheese in quickly .
  10. Adjust salt and pepper to taste . Also in this step , the sauce thickens and reduces considerably .
  11. I like to use mozzarella and cheddar because I feel this combination tastes better .
  12. Serve immediately !
