Veggie soya nuggets are a perfect tea time treat and also serve as great starter for any meal of the day. These are loaded with veggies and soya goodness. Healthy and delicious snack, seems almost impossible unless you try these nuggets.

Ingredients Serving: 6

  1. 1½ cups : finely chopped mixed veggies
  2. 2 large : potato boiled, mashed
  3. 1 cup : Soya mince
  4. 1/4 Cup : Gram flour
  5. 1 tsp :. Ginger garlic minced
  6. 2 nos : Green chillies minced
  7. 3 tbsp : Chopped coriander
  8. 1 tsp : Roasted Cumin powder
  9. 1 tbsp : Coriander powder
  10. 1 tsp : Garam masala
  11. 1 tsp. Red chilli powder
  12. 1/2 tsp : Dry mango powder
  13. 1/2 tsp : Chaat masala(optional)
  14. 1/2 tsp : Turmeric
  15. Salt to taste
  16. 2 tbsp : All purpose flour
  17. 4 tbsp : water
  18. Oil for Deep frying

Instructions

  1. Boil the potatoes. Peel and mash them. Set ready until required.
  2. Soak the soya chunks in hot water for half hour until soft and doubled.
  3. Squeeze water from plumped soya and pulse in a food processor couple of times . Take it into a bowl and keep ready.
  4. In a pan add a tsp of oil.Once hot add the minced ginger garlic green chillies and finely chopped vegetables.
  5. Saute until they turn soft for about 5 to 6 minutes.
  6. In a medium bowl take mashed potato, sauteed vegetables, minced soya,chopped coriander, gram flour and rest of the spices.
  7. Mix them well to form a dough like .
  8. Take a spoonful of mixture onto your greased palms and shape into bite sized bullets/nuggets.
  9. In a small bowl take all purpose flour and water . Mix and make into a slurry without any lumps.
  10. Start heating oil in a deep pan for frying nuggets.
  11. Dip each nugget in flour slurry. Shake off the excess and add to the hot oil.
  12. Fry the nuggets in moderately hot oil until golden on all sides and drain them on a paper towel.
  13. Repeat and cook remaining nuggets in the same manner.
  14. Serve them hot with a dip of your choice. My personal choice would be, the same old ketchup.
  15. Veggie soya nuggets with a slight crunch on the outside and softer inside are ready to munch.
  16. Healthy and delicious treat for a perfect evening.
