Ingredients Serving: 3

  1. 1 tbsp - ginger garlic paste
  2. 1 tsp - biryani masala powder
  3. 1 tsp - red chili powder
  4. 1 tsp - turmeric
  5. 4 tbsp - ghee or oil
  6. Saffron strands 30 ml hot milk to soak
  7. 250 ml yogurt
  8. Few cashews and raisins
  9. Nutri nugget 1 cup
  10. 8 medium sized cauliflower florets
  11. 1 large boiled potato cubed (peeled and boil till  done)
  12. 1 large carrot chopped
  13. green peas - 1/2 cup
  14. A few mint leaves
  15. green chili 2
  16. A few coriander leaves
  17. Cinnamon stick 2 inch
  18. green caradamom 2
  19. black cardamom 1
  20. Strands of mace 2
  21. 1 star anise
  22. 6 cloves
  23. 1 bay leaf
  24. ½ tsp shahi jeer
  25. Basmati rice 1 1/2 cup

Instructions

  1. Wash rice and boil in excess water. When 2/3 done (al dente) separate the excess water and spread it on a cloth so that there is no moisture nor any steam. Take a pan and heat some ghee.
  2. Add all the dry whole masalas. When it splutters add all the biryani ingredients. Mix well. Add all the vegetables. Assemble the biryani. I make it in the microwave which makes it very easy to cook.
  3. Take microwave dish, add half vegetables and curd. Microwave for 2-3 minutes on high. Take out the dish. Now spread rice on it.
  4. Spread onion and green leaves. Sprinkle saffron water, cover it with cling film.
  5. Microwave for 6-8 minutes. Eat with raita or green chutney and pickle.
