when a party at home and you don't know guests' like n dislike about food then there is a big question 'what to cook in main course?'.. one you can make paneer..and other here is my no fail simple delicious masala vegetable recipe which is always liked by everyone .

Ingredients Serving: 3

  1. Vegetables
  2. Baby potatoes 7-8
  3. cauliflower few flore
  4. Small /Baby Brinjals slit criss cross but intect from bottom 5-6
  5. French beans cut into 2 inches 5-6
  6. small/baby lady fingers 8-10
  7. Bitter gourd cut into small rounds 1 inch pieces 1 long sized
  8. Button onion 2-3 / 1 onion cut into
  9. Anardana/chat masala 1 tsp
  10. kasmiri red chilly powder 1/4 tsp
  11. Coriander cumin powder 1 tsp
  12. Oil to deep fry
  13. For gravy
  14. onion grated 1 large sized
  15. tomatoes chopped 2 large sized
  16. cardamom green 1-2
  17. Cloves 3-4
  18. ginger grated 1 inch
  19. ginger garlic paste 1/2 teaspoon .
  20. Turmeric powder 1/4 teaspoon
  21. kashmiri red chilly powder 1/2 teaspoon
  22. chat masala 1/2 teaspoon (adjust according to taste)
  23. Kitchen king masala/garam masala 1/2 teaspoon
  24. Curd 2 tablespoons
  25. Cream 2 tablespoon
  26. Kasuri methi 1/4 tsp
  27. Butter/Ghee 2 tablespoons
  28. Little more butter required for frying vegetables while serving.

Instructions

  1. Mix chat masala, red chilly powder and cumin-coriander powder
  2. scrape bitter gourd cut into pieces, remove seeds and keep in salty water ( 1 cup water + 1/2 tsp salt)
  3. peel potatoes prick with fork and keep in salty water for 10-15 mins
  4. slit baby lady finger and baby brinjals
  5. get all vegetables ready
  6. deep fry all vegetables in hot oil sprinkle mixture of chat masala , cumin-coriander powder and red chilly powder and keep aside.
  7. for masala/gravy
  8. make a puree of chopped timatoes along with cardamom, ginger and cloves.
  9. heat ghee in a pan add ginger garlic paste and grated onion. sauté for few minuts (till raw aroma goes)
  10. add turmeric powder , red chilly powder , kitchen king masala, chat masala and mix well add tomato puree.
  11. add curd ,cook till mixture starts leaving oil. Then add cream
  12. add kasuri methi mix it add little water..
  13. your masala is ready.
  14. arrearage all fried vegetables on the edges of an iron skillet
  15. when you have to serve ..just add 1/2 teaspoon of butter in the middle of skillet add one or two teaspoon masala (gravy) mix and add veggies of your guest's choice . cook for a while in masala and serve..
  16. you can add or subtract any vegetable according to your choice.
