Rins 11/2 cup chick peas 2-3 times and soak them for 8 hours in sufficient amount of water
After 8 hours drain chick peas water and put them inside pressure cooker,add fresh 4 cup water ,salt to taste,add some whole spices like bay leaves,big black cardamom,green cardamom,pepper corns,cinnamon stick
Put on lid and Pressure cook chick peas on high flame until 2-3 whistle comes reduce the flame and cook till 3-4 whistles comes or till chick peas becomes soft.
Clean and rins 1 cup fenugreek leaves(menthi patta)3-4 times with water and keep them on a
Make a fine paste out of it.
Chilli and tomato paste
Heat 4 tablespoon oil in a pan
Add in cumin seeds when it starts crackling add in chopped onions And fry untill gold brown.
Add in ginger garlic paste and stir fry till raw smell goes.
Add in chilli tomato paste and 4 tablespoon thick curd and fry till oil starts showing at the sides of a pan.
Add all powder spices like turmeric,red chilli ,fennel, coriander,garam masala,asafoetida,chana masala,cumin and stir.
Fry until nice aroma start coming from spices or till raw smell goes.
Add chopped fenugreek leaves and sir fry on high flame for 3-4 minutes
Continue Stir frying till oil separates from fenugreek and spices on medium flame.
Strain boiled chick Peas water and keep this water separately.
First add boiled chick peas stir for a while then add boiled chick peas water as per your requirement.
Smash some boiled chick peas and cook on high flame til it starts boiling..
Add dry mango powder and handful of chopped coriander leaves stir and cook on medium flame for 2 minutes.
Sautey paneer pieces to light golden brown in 1 tablespoon butter
Mix golden fried paneer with ready chick peas and methi masala,keep few paneer pieces for garnishing.
Now serve your ready home chef style methi paneer chole masala and garnish with onion rings and few tomato slices
