ABOUT Tuna salad stuffed Tomatoes RECIPE

Convenient and nutritious recipe with the crunch of the celery and the zing of the Jalapeños complimenting the Tuna and the Tomato. Best for a day when you don't want to strive in the kitchen yet want gourmet food on your table.

Ingredients Serving: 4

  1. 4 medium round Tomatoes
  2. 1/3 Cup Canned Tuna chunks
  3. 1 small onion, finely chopped
  4. 1/3 Cup Coloured Bell peppers, finely chopped
  5. 5-6 Black olives, finely sliced
  6. 2 Jalapeños,finely sliced (optional)
  7. A handful Celery, chopped
  8. 2 Spring Onions with greens (optional)
  9. 2 tablespoons low fat Mayonnaise
  10. Salt and pepper to taste

Instructions

  1. Slice the top of the tomatoes and using a paring knife and spoon scoop out the pulp of the tomatoes .Youcan use the insides of the tomato for any other recipe.
  2. Keep the scooped tomatoes upside down on a kitchen towel for the water to drain out.
  3. Drain the oil or the spring water from the tuna cans and mash the tuna chunks with a fork in a bowl.
  4. Mix the rest of the ingredients with the tuna and mix well. With the help of a spoon fill the hollows of the tomatoes with the tuna salad .
  5. Garnish with a mint leaf or keep back the sliced tops of the tomatoes and refrigerate the stuffed tomatoes covered and serve them cold.
