ABOUT Honey Madeleines RECIPE

You will need a Madeleine tin for those in order to get that lovely shell design on each little cake. They are delicious glazed with honey , any type of jam or simply dusted with icing sugar. Goes well with tea time snacks and kids tiffin box.

Ingredients Serving: 10

  1. Caster sugar- 120 gm
  2. Eggs- 3 nos
  3. Honey - 2 tbsp + extra for glazing
  4. Vanilla essence- 4 drops
  5. Unsalted butter( melted) - 130 gm + extra for greasing
  6. Flour - 130 gm
  7. Baking powder - 1 1/2 tsp
  8. Apricot jam for glazing.


  1. Whisk the sugar and eggs until light and frothy. Mix in the honey, vanilla and melted butter then fold in the flour and baking powder.
  2. Spoon the mixture into a butter greased Madeleine tray, filling each indentation two - thirds full.
  3. Bake in an oven preheated to 200 degree centigrade for about 12 minutes.
  4. Allow to cool slightly then transfer to a wire rack.
  5. Repeat this step until all the mixture has been used.
  6. Warm the honey with apricot jam and brush it over the dome of the madeleines while they are still warm.
  7. Approximately 20 madeleines will come.
