Ingredients to make Gutti vankaya koora

  • Brinjal/baingan: 250 gms
  • oil: 2 to 3 tbsp
  • salt as per taste
  • shallots /small onions: 5
  • garlic: 2 pods
  • tamarind: lemon size
  • spices to blend:
  • chana dal: 1 tsp
  • urad dal: 1 tsp
  • coriander seeds: 1 tsp
  • jeera: 1 tsp
  • Red chillies: 6- 8

How to make Gutti vankaya koora

  1. Heat a wok and roast all the spices. Then blend them well and keep aside.
  2. Wash the eggplant and make four slits, then keep them in the water so that they do not change their colour, also note to put ome salt in this water.
  3. Heat a wok and fry onions and tamarind slightly, so that the raw smell disappears and blends with a little water to form into a paste, mix these with masala and stir it well .
  4. Put the blended paste into the brinjal. Heat oil in a wok and add the stuffed brinjal and stir slowly, put a slow flame and stir occasionally until they turn brown in colour .
  5. Add in the remaining paste and pour a little water [ nearly half cup of water] and cook on a slow flame until the the masala comes closer, then turn off the flame.
  6. Serve it with hot with steamed rice .

I tried it. I am new to cooking, I made the tamarind along with fried onions and the spices into a paste. is this the right way for above receipe
