Ingredients Serving: 4

  1. Maida/ all purpose flour 250 gm
  2. Salt 1 tbspn
  3. Kalonjee/ nigella seeds 1 tspn
  4. Vegetable oil for deep frying
  5. Water around 3/4 cup
  6. Red chilli powder 1/2 tspn

Instructions

  1. Take all purpose flour in a deep bowl
  2. Add the salt, nigella seeds, red chilli powder and 1 tbspn full of vegetable oil to the flour and mix well
  3. Add water in small quantities and knead it to a soft dough
  4. Keep the dough resting for 5 minutes covered with a muslin cloth
  5. Divide the dough in 5 equal balls
  6. Take one ball and roll in out with a rolling pin flattening it but not making it very thin
  7. Roughly prick all over the rolled out dough with the help of a fork
  8. With the help of a knife cut it into diamonds roughly one inch each
  9. Heat oil till its medium hot and deep fry nimkis till crisp and light brown
  10. Repeat the same with the rest of the dough
