ABOUT Vegetable Teriyaki Noodles RECIPE

Vegetable Teriyaki Noodles is a delicious , easy to prepare and mildly spiced noodles.

Ingredients Serving: 3

  1. Carrot ( cut into thin strips) : 1/2 cup
  2. Green beans (cut into thin strips lengthwise) : 1/2 cup
  3. Bell pepper or capsicum ( cut into thin strips) : 1/2 cup
  4. Cabbage (finely shredded) : 1 cup
  5. Sugar snap peas : 1/2 cup (optional)
  6. Onions (thinly sliced) : 1/2 cup
  7. Ginger (grated ) : 1 tbsp
  8. Garlic (grated) : 1 tbsp
  9. Green onion (finely chopped) : 1/2 cup
  10. Oil : 2 tbsp + 1 tsp
  11. Noodles (you can use soba noodles , udon noodles , Ching's Noodles or any noodles of your choice ) : 8 oz (approx. 250 grams)
  12. Spicy peanuts : 1/4 cup
  13. Sesame seeds : 1/4 cup (I used white sesame seeds)
  14. Salt if needed
  15. Soy sauce : 1/4 cup
  16. Honey : 2 tbsp
  17. Red chilli flakes : 1 tsp (adjust according to taste)
  18. Sriracha sauce : 1 tsp (adjust according to taste)
  19. Rice Vinegar : 2 tbsp
  20. Corn starch : 1 tbsp

Instructions

  1. Dry roast the sesame seeds and set aside.
  2. Bring a medium pot of water to boil. Add the noodles and cook until slightly done (al dente) or cook as per the package instructions. Drain the water and set aside.
  3. In a bowl, take 1 tso oil, soy sauce, honey, red chilli flakes, Sriracha sauce, Rice vinegar and corn starch. Whisk and mix well. Your sauce is ready.
  4. Heat 2 tbsp oil in a big pan / wok. When hot , add the onions , ginger and garlic. When the carrot, green beans and sugar snaps peas. Cook for 5 mins. Once the veggies are almost cooked, add the remaining veggies (cabbages, bell peppers and

  6. Add the cooked noodles. Toss it well so that it is well covered with the sauce. Adjust the seasoning if needed.
  7. Lastly add the toasted sesame seeds and spicy peanuts. Serve hot. Serve some Sriracha sauce on the side for added spiciness / heat.
