ABOUT Moong Dal Halwa RECIPE

A classic recipe that is relished throughout Rajasthan during the winter months, as it is supposed to keep the body warm and protect it from the bitter winter cold.

Ingredients Serving: 6

  1. 1 cup split yellow moong dal
  2. 1 cup ghee
  3. 3/4 sugar
  4. 2 1/2 cups milk
  5. cardamom powder 1 tsp
  6. raisins 3 tbsp
  7. chopped almonds 2 tsp
  8. saffron 1 pinch

Instructions

  1. Soak moong dal in warm water for 3 hours. After that drain the water out and grind it in a coarse paste.
  2. Take the mixture in a muslin cloth and drain the water again. Soak saffron in 3 tbsp of warm milk.
  3. Heat ghee in a heavy bottom pan. Add the dal mixture to it and stir continuously.
  4. Stir till it gets golden brown in color and starts forming crystals leaving ghee on the sides. The mixture should no longer give a raw dal aroma.
  5. Add hot milk to it along with sugar, raisins and cardamon powder. Add the saffron milk to it.
  6. Stir continuously till the milk gets absorbed and the mixture starts leaving ghee on sides.
  7. Take in a serving bowl and garnish with chopped almonds.
