Very yummi kids dessert but loved by all age group.

Ingredients Serving: 5

  1. All purpose flour 1 1/4 cup
  2. Baking powder 1 teaspoon
  3. Baking soda 1/2 teaspoon
  4. Castor sugar 4 tablespoon
  5. eggs 2 numbers
  6. Oil 1/2 cup+ oil for greasing
  7. vanilla essence 3-4 drops
  8. Pomegranate juice 1 cup
  9. Beetroot concentrated colour(optional)
  10. lemon juice 1 tablespoon
  11. For syrup-
  12. Water 1/2 cup
  13. Sugar 2tablespoon
  14. Honey 1/4 cup
  15. For topping-
  16. Mango jam 5 tablespoon
  17. Sugar 2 tablespoon
  18. Desiccated coconut as per requirement

Instructions

  1. First preheat oven at 180 degree centigrade for 10 minutes ,then Take a bowl add in all purpous flour,baking powder,baking soda mix uniformly with a whisk and keep it aside.
  2. Take another bowl add in castor sugar and crack in two eggs.
  3. To this now add 1/2 cup of oil.
  4. Add in 4-5 drops of vanilla essence.
  5. Blend all the ingredients well with a hand mixer at high speed for 3-4 minutes.
  6. Add in little flour at a time
  7. Then add some pomegranate juice at a time and mix with a spatula.
  8. Mix gently with a spatula or with a hand mixer, dont over mix .
  9. Again add in remaining flour and to this add remaining pomegranate juice and mix again all the ingredients .
  10. Make sure all the ingredients should incorporate with each other well.
  11. After mixing pomegranate juice cake batter will become light purple bluish in colour .
  12. If you want you can keep this batter like this or you can add some liquid colour to this cake batter to look better.
  13. i added home made concentrated beetroot colour 1 tablespoon.
  14. Mix again lightly with a spatula or with a hand mixer
  15. Add in lemon juice
  16. Over this lemon juice add 2 pinch of baking soda for more fluffiness of the cake.
  17. Mix gently
  18. Grease one baking tin and pour cake batter ,look at this cake batter it should be of flowing consistency.
  19. Now pat against the slab to take out air bubbles from the pomegranate cake batter.
  20. Keep it in a preheated oven and bake at 180 degree celcius for 30 minute or bake until tooth pick comes out clean
  21. Set the oven for 30 minutes at 180 degree celsius.
  22. After 25 minutes keep an eye on your cake it should not burn ,because baking time depends on the capacity of your oven and density of batter also.
  23. Mine got ready at 29 minutes.to check insert a skewer or tooth pick if it comes out clean then sponge cake has baked fully.
  24. Let it cool down for 10 minutes.
  25. Now insert a knife at all the sides of the baking dish.
  26. Now demold the cake and let it cool down completely.
  27. Level the cake by slicing 1/2 inch
  28. Now trim all the four sides of pomegranate sponge cake.
  29. Make sugar syrup by Boiling water and sugar until sugar dissolves completely.
  30. Make holes with the help of skewer or with a toothpick on the surface of a pomegranate sponge cake ,so that honey syrup get absorb easily and evenly.
  31. Bring sugar syrup to lukeworm and dissolve honey to it and mix well.
  32. heat jam and sugar in a pan over low flame until it starts melting.
  33. Pour the sugar syrup generously all over the flat surface of the pomegranate sponge cake.
  34. Over this spread the mango jam to make a thin layer
  35. Sprinkle some descicated coconut over this to cover the jam layer.
  36. Keep it for chilling inside the refrigerator for 25-30 minutes.
  37. Take out from the refrigerator and cut into shapes of your choice and enjoy chilled pomegranate Honey cake.
