Pumpkin kheer/ Red Pumpkin Kheer

Ingredients to make Pumpkin kheer/ Red Pumpkin Kheer

  • 1/2 Kg Red pumpkin
  • handful of broken cashewnuts
  • 3 Cups of Milk
  • few strands of saffron
  • 1/2 cup sugar
  • 2 tbsp roasted almond flakes for garnishing

How to make Pumpkin kheer/ Red Pumpkin Kheer

  1. Peel the Pumpkin shell, remove the seeds and cut them into cubes
  2. In a Pan, take one and half cup of milk.Add the pumpkin cubes and handful of cashewnuts, let it boil. Add saffron strands to this. Reduce the flame to medium and cook until the pumpkin are soft.
  3. Let it cool. Take this in a blender and Blend it smooth.
  4. Add the remaining milk to this and take it to stove again. Add sugar and let this cook in a slow flame for 15-20 minutes.
  5. Add Roasted almond flakes and take it off the stove and Serve Warm.

My Tip:

Try adding 1/2 tin condensed milk for a richer consistency of the kheer! Your people will neverknow it is made of khaddu
