ABOUT Brinjal Thokku RECIPE

This curry is such a delicious one to relish with hot steamed rice.. i prefer for idli dosa too. Brinjal normally called for iron and folic content.

Ingredients Serving: 4

  1. Brinjal 4-5 nos
  2. Onion 1 cup chopped
  3. Tomato 3-4 nos
  4. Garlic 4-5 pods
  5. Gingely Oil 3 tsp
  6. Mustard seeds 1/2 tsp
  7. Methi Seeds/Fenugreek 1 tsp
  8. Curry Leaves 2 spings
  9. Garlic 4-5pods
  10. Chilly powder 2 TSP
  11. Coriander powder 1.5 tsp
  12. Turmeric powder 1/4 tsp
  13. Sambar powder 1 tsp
  14. salt as needed
  15. Tamarind water 1 cup( Pulp of a lemon sized tamarind)

Instructions

  1. Chop Brinjal and put them in a bowl of water, Chop onions and tomatoes, Crush the garlic pods
  2. Heat the Pressure pan with oil, Temper with Mustard and Methi seeds. Add in the chopped onion and fry for few mins.
  3. Add some crushed garlic and curry leaves to the pressure pan. Squeeze out the brinjal and add them. Fry the brinjal for 5 mins and add in the chopped tomatoes.
  4. Cook till the tomatoes get mushed and ooze out the oil. Add in the child powder, coriander powder, turmeric powder, sambar powder and salt, mix and cook for 2 more mins in medium flame. Add in the tamarind water, bring this to boil.
  5. Pressure cook the curry for 2 whistles. Release the pressure and open the pan.. check for salt and taste. Adjust and cook more if needed.
