I have learnt this from my mother and completely love this recipe, as easy and quick curry to be served with roti.

Ingredients Serving: 5

  1. 5-6 brinjals small size,
  2. curd-3 teaspoon,
  3. kalonji [onion seeds] -1/2 tsp ,
  4. ginger-garlic paste – 1 teaspoon,
  5. curry leaves – 5-6 optional,
  6. 1 small onion paste,
  7. slit chilies – as per taste,
  8. salt,
  9. turmeric powder - 1/2 tsp,
  10. Cumin powder - 1 tsp
  11. Coriander powder - 1 tsp
  12. Kashmiri red chilly powder - 1 tsp
  13. Salt
  14. Mustard oil

Instructions

  1. slit the small brinjal and make sure you keep the stem. Rub salt and turmeric and fry them in mustard oil till 80% done. Now remove and keep aside. In the same oil add kalonji, curry leaves, add the onion paste and stir well.
  2. Then add the ginger garlic paste and saute further, then add the powdered masalas. Then add the whisked curd, mix well.
  3. Add salt and cook further, till the masala leaves oil. then add little water for the gravy. Let this boil and then add the fried brinjals. Mix and serve.
