Dahi Baingan

Ingredients to make Dahi Baingan

  • 5-6 brinjals small size,
  • curd-3 teaspoon,
  • kalonji [onion seeds] -1/2 tsp ,
  • ginger-garlic paste – 1 teaspoon,
  • curry leaves – 5-6 optional,
  • 1 small onion paste,
  • slit chilies – as per taste,
  • salt,
  • turmeric powder - 1/2 tsp,
  • cumin powder - 1 tsp
  • coriander powder - 1 tsp
  • Kashmiri red chilly powder - 1 tsp
  • salt
  • mustard oil

How to make Dahi Baingan

  1. slit the small brinjal and make sure you keep the stem. Rub salt and turmeric and fry them in mustard oil till 80% done. Now remove and keep aside. In the same oil add kalonji, curry leaves, add the onion paste and stir well.
  2. Then add the ginger garlic paste and saute further, then add the powdered masalas. Then add the whisked curd, mix well.
  3. Add salt and cook further, till the masala leaves oil. then add little water for the gravy. Let this boil and then add the fried brinjals. Mix and serve.

My Tip:

beat the dahi well before you add to give it a good consistency..
