ABOUT Burhani baigan RECIPE

This is a traditional recipe which was made by my maternal grand mother so sharing her delicious dish with all of you.

Ingredients Serving: 5

  1. 1 big size eggplant
  2. 1 tbs ginger garlic paste
  3. 3 tsp Red chilli powder
  4. 2 tsp coriander powder
  5. 1 tbs cumin powder
  6. 1 tbs garam masala powder
  7. 1 tsp black salt
  8. 1 tsp dry mango powder
  9. Salt to taste
  10. Oil for fry
  11. FOR GARNISH
  12. 2 cup yoghurt
  13. 2 tbs chopped coriander leaves

Instructions

  1. Cut the egg plants into roundels and keep aside. Take a bowl and add all the spices , Ginger garlic paste and mix well.
  2. Apply the masala onto the eggplant pieces, on both the sides and keep aside for 15 minutes ,
  3. After that fry the eggplant slices( in little oil) on both sides till nicely browned and cooked through.
  4. In a serving tray arrange the fry slices And spread yogurt . Garnish with some chopped coriander leaves. Serve with chapati.
