A konkani style curry for rice..

Ingredients Serving: 4

  1. Ladies finger - 8-9, cut into 1" pieces
  2. Coconut - 1 cup, grated
  3. Green chillies - 4-5
  4. Tamarind pulp - 1 tsp
  5. Mustard seeds - 1/4 Tsp
  6. Asafetida - a pinch
  7. Curry leaves - 7-8
  8. Oil - 1 tbsp + 1 tsp
  9. Salt

Instructions

  1. Grind coconut, green chillies and tamarind pulp along with water to a smooth paste. Keep aside.
  2. Heat a tbsp of oil in a pan. Put in the ladies finger and fry till cooked.
  3. Add the coconut paste into the pan. Add salt and mix well. Add water if necessary.
  4. Cover and keep on low flame till the coconut paste is cooked.. Take off the heat and keep aside.
  5. Heat a tsp of oil in a tadka pan. Add mustard seeds and asafetida.
  6. Then put in the curry leaves. Pour this over the curry.
  7. Serve hot with rice.
