ABOUT Mint Egg Burji RECIPE

A fresh touch of mint changed the taste of regular egg burji/ egg palya. Try it out when you are bored of regular taste.

Ingredients Serving: 2

  1. 4 Eggs
  2. salt as per taste
  3. 1 medium onion
  4. 5 teaspoon oil
  5. To Grind:
  6. 5 Green chillies
  7. 1/2 teaspoon saunf
  8. 1/2 inch ginger
  9. 6 garlic pods
  10. Few mint leaves

Instructions

  1. In a jar add all the ingredients under section "to grind".
  2. Grind the mixture to a fine paste with very little water and keep aside. (If more water is added then it takes lot of time to fry and when you add eggs to it the texture differs).
  3. In a pan, add oil and allow to heat on medium flame.
  4. Add in finely chopped onions and fry till translucent.
  5. Now add the grinded paste and fry nicely.
  6. Add in salt as per taste. Mix well.
  7. Now lower the flame and add the eggs. Mix well and cook till the eggs are cooked to perfect.
  8. When it is done, serve it hot with chapati or puri.
