Pasta cooked in a sauce made with pumpkin and carrot puree

Ingredients Serving: 4

  1. Pasta of your choice : 500 gms.
  2. Pumpkin : 1 1/2 cup, roughly chopped
  3. Carrots : 2, chopped
  4. Green peas : 1/2 cup(optional)
  5. Green onions : 1/3 cup, chopped(optional)
  6. Garlic : 5 cloves, finely chopped
  7. Flour : 1 tblsp.
  8. Butter : 1 tblsp.
  9. Milk : 1/2 cup
  10. Fresh Cream : 1 tblsp.
  11. Grated cheese : 1/3 cup( mozzarella/cheddar)
  12. Salt to taste
  13. Black Pepper to taste
  14. Dried or fresh Italian herbs : 1 tsp.
  15. Red Chilli flakes : a pinch(optional)
  16. Oil : 1 tblsp.

Instructions

  1. Cook pasta in big bowl of water with 1 tsp. salt and 1 tsp. oil until al dante. Drain and set aside.
  2. Boil pumpkin and carrots until just done, then puree in food processor.
  3. For the white sauce, take butter in a pan, add flour, saute for a minute before it changes its color, then add milk in there. Mix well. Add fresh cream and grated cheese in the sauce.
  4. Stir the sauce until cheese melts well. Remove from heat before it dries up.
  5. Now heat 1 tblsp. oil in another pan, add finely chopped garlic, chopped green onions, stir for 1/2 a minute, then add pureed pumpkin and carrot. Add green peas if you are using it. Season the puree with salt and black pepper.
  6. Now add cooked pasta and white sauce and mix well with the puree. Season the pasta with red chilli flakes and italian herbs. Note : you can any vegetable of your choice, like broccoli, spinach etc.
  7. Cook for few minutes, if you feel the pasta is looking dry, you can add little milk in the pasta and make it creamier.
  8. Serve hot from the pan.
