my mother was always an inspiration.she used to bake variety of cakes when i was in school.those days they did not have any microwave or convection.I learnt lot from her.now am happily baking for my kids.

Ingredients Serving: 8

  1. 170gms of unsalted butter
  2. 2 1/2 cups all-purpose flour
  3. 2 teaspoons baking powder
  4. 2 teaspoons ground ginger
  5. 1 teaspoon salt
  6. 1 cup sugar
  7. 1 cup brown sugar
  8. 1 3/4 cup pumpkin puree
  9. 3 Large eggs

Instructions

  1. Preheat oven to 375 degrees.
  2. Butter and flour two 9-by-4 inch loaf pans.
  3. In a large bowl, whisk together flour, baking powder, ginger, and salt.
  4. In a medium bowl, whisk together sugars, pumpkin, melted butter, and eggs.
  5. add flour mixture, and stir until just combined.
  6. Divide batter between prepared pans.
  7. Bake until a toothpick inserted in center of loaves comes out clean, about 45mins
  8. Let cool 10 minutes; invert the pans and transfer loaves to a wire rack to cool completely
