ABOUT Teetar Pulao/Karela Pulao (Bitter Gourd Pulao) RECIPE

A simple dish to whip up on lazy days, incorporating bitter gourd/karela, which is not only delicious but also great for health. This dish is a great way to feed karela-haters with something unique, and I promise you, the flavours will make a convert out of them too!

Ingredients Serving: 2

  1. Pre-cooked rice - 1 cup
  2. Bitter gourd/Karela - 2, cut into thin roundels, seeds discarded
  3. Ginger - 1 inch piece, grated
  4. Chilies - 4 to 5, green or red, chopped
  5. Lemon Juice - of 1 lemon
  6. Coriander - a handful, chopped fine
  7. Turmeric - 1/2 tsp
  8. Salt - to taste
  9. Mustard oil - 2 to 3 tbsp
  10. Ghee - 1 tbsp

Instructions

  1. Toss the sliced bitter gourd in some salt, and fry them until they're brown and crisp. Retain the oil.
  2. In the same oil, add the mustard seeds, grated ginger and chopped chilies, and fry them until fragrant.
  3. Add turmeric, and the pre-cooked rice, and salt.
  4. Toss, and add coriander, and lemon juice, toss again and add fried bitter gourd until everything is well mixed.
  5. Lastly, add the ghee and use a fork to fluff up the rice.
  6. Serve hot with some raita, or even a little sambar or dal
