ABOUT Khatta Mittha Stir fried karela/ Bitter Gourd RECIPE

Bitter gourd...! Name itself gives a bitter taste in mouth.. But here i have used tamarind juice and jaggery to hide bitter taste of bitter gourd. It has many health benifits including curing of diabeties, improving immunity, fighting against infections ! This can be served with fulka rotis or khichdi!

Ingredients Serving: 2

  1. 2 Bitter gourds / Karela
  2. 1 tsp salt for marination
  3. oil 2 tbsp
  4. 1 Cup water
  5. 1/2 tsp mustard seeds
  6. 1/2 tsp chana dal
  7. 1/2 tsp Urad dal
  8. few curry leaves
  9. 2 red dry chillies
  10. pinch of hing/asafoetida
  11. 1/2 tsp turmeric powder
  12. 1 cup tamarind juice /imli juice
  13. 1 big chunk of jaggery / gudd
  14. 2 tbsp fresh or dessicated coconut
  15. 1 tsp rasam powder

Instructions

  1. Slice the bitter gourd / karela into thick slices.
  2. Remove the seeds and middle part
  3. Transfer the sliced bitter gourd into a large bowl and add a tsp of salt.
  4. Mix well and allow it to rest for 20-30 minutes
  5. Now rinse the bitter gourd under cold water.
  6. In a large kadai, add a tbsp of oil along with mustard seeds, chana dal, urad dal, dried red chilli, curry leaves and hing.
  7. Fry and allow to splutter
  8. Add the squeezed and drained bitter gourd and stir-fry for 3-4 minutes.
  9. Now spread them well on a kadai and cook for about 10 - 15 minutes or until softened.
  10. Now add tamarind juice, jaggery turmeric powder. ( &salt if required only)
  11. Mix well and allow to cook till water drains completely.
  12. Now Add rasam powder and fry for 2 minutes.
  13. Add a tsp of oil over it.
  14. Garnish with fresh or desiccated coconut.
  15. Serve it with hot fulka roti or khichdi
