Dahi Baingan

Ingredients to make Dahi Baingan

  • 6-7 small brinjals with stem
  • 5-6 curry leaves (Optional)
  • mustard Oil for frying - 3-4 teaspoon
  • salt to taste
  • turmeric Powder - a pinch
  • 1 meduim onion- paste
  • giner garlic paste - 1 teaspoon
  • curd - 3-4 teaspoon
  • jaggery - 2 inch (mash it)
  • tarmarind pulp - 1 teaspoon)
  • jeera powder - half teaspoon
  • dhania powder - half teaspoon
  • kalonji - a pinch for tempering

How to make Dahi Baingan

  1. wash and dry pat the brijals
  2. slit them but make sure you keep the stem
  3. Heat mustard oil in a kadhai
  4. add slat and turmeric to the brijals and fry them till 80% done
  5. take them off the oil and keep aside
  6. In the same oil add the kalonji
  7. Add curry leaves
  8. Add Onion paste and fry till oil separates
  9. Add ginger garlic paste and fry till raw smell disappears
  10. Beat the curd well and add it , stir well till it brings a very nice color
  11. now add the tamarind pulp and Jaggery to it and stir well. add a very little water to it. mix it well.
  12. now add the brinjals and mix very carefully. do not let it break . cook for 5 mins. remove from heat and serve hot.

My Tip:

the curd needs to nicely beaten. the tamaring and jaggery paste has to be thick in consistency and in proportion to bring the sweet sour flavour.
