wash and dry pat the brijals
slit them but make sure you keep the stem
Heat mustard oil in a kadhai
add slat and turmeric to the brijals and fry them till 80% done
take them off the oil and keep aside
In the same oil add the kalonji
Add curry leaves
Add Onion paste and fry till oil separates
Add ginger garlic paste and fry till raw smell disappears
Beat the curd well and add it , stir well till it brings a very nice color
now add the tamarind pulp and Jaggery to it and stir well. add a very little water to it. mix it well.
now add the brinjals and mix very carefully. do not let it break . cook for 5 mins. remove from heat and serve hot.
SERVING: 5
